Italian cuisine combines authentic flavours such as sundried tomatoes, nice smelling basil olive oil, savoury cheese and delicious pasta. Savoury aperitivo and antipasti and sweet dolci. Simple dishes featuring only a few ingredients characterise Italian cuisine. Italian recipes are built on pure flavours which might just be the reason why they’ve become so popular.
Olive oil, herbs, vegetables, grains, wine and various meats are typical of Greek cuisine. The taste of fresh ingredients and fabulous combinations of herbs and spices are the secret of a great Greek chef. Cooking food slowly, allows the flavours to blend into amazing dishes that remind Greeks of the dishes made by their (grand)mothers. Traditional Greek dishes vary from simple mezze (appetisers) and starters made with feta, tomatoes and olives to tasty main courses straight from the oven such as moussaka and pastitsio or stews such as stifado and giouvetsi.
Spanish cuisine is a combination of many regional cuisines such as Catalonia, Galicia and the Basque Country that all have their own specific characteristics. Spain is the second, after Japan, largest fish and seafood consumer in the world. There are a huge amount of ingredients characterising the Spanish cuisine but there are a few internationally renowned products such as jamón serrano, chorizo and numerous wines from La Rioja and Valdepeñas. And then we haven’t even mentioned the impressive number of cheeses, nuts, mushrooms and asparagus.
Across the ocean, we encounter the Latin-American and Texan-Mexican (Tex-Mex) cuisine. Historians have found documents showing that the American army ate their first Chilli con Carne in the 19th century in Texas. Furthermore, you’ll also find Mexican enchiladas and a fresh Peruvian Ceviche on our menu. Unique dishes with their own character and taste pallet. The Latin-American cuisine is strongly influenced by the Spanish and Portuguese cuisine but still has a lot of elements from the original food culture.
Asian cuisine has so much to offer but we mostly prepare Thai and Indian-inspired dishes. Both cuisines are strongly characterised by their spices, fragrances and rice curries even though they’re very different.
Coconut aroma, fresh lemon grass and soft to stronger spices are typical of Thai cuisine. It’s a revolutionary and innovative cuisine that awakens your senses: contrasting flavours combined with lovely aromas, lots of colour and texture. Thai dishes find a perfect balance between sweet, savoury, sour and spicy and thanks to its diversity in fish, meat and fresh vegetables, Thai cuisine is suitable for everyone.
Indian cuisine is based on rice, potatoes, vegetables and fresh herbs. But every part of India showcases their very own dishes and flavours. The North and the East are characterised by mild flavours. In North India naan, yoghurt, nuts, dried fruit, lamb and paneer are common guests on the table. Do you like it spicy? In that case, you’ll want to travel to the South of the country, famous for its hot curries with a lot of rice. They also love fish, coconut, tamarind, lime juice and curry leaves.
The most famous dishes from the Middle Eastern cuisine are undoubtedly taboulé, hummus and various types of goat cheese with or without herbs. A mezze will have these and other cold and hot dishes that are shared by all the guests at the table. Middle Eastern cuisine is influenced by Armenians, Persians and Kurds. While they work with numerous blends of herbs and spices, this cuisine isn’t as spicy as the Indian or Thai cuisine. However, if you like it hot, you can always add some harissa.
Lebanese cuisine shares some similarities with Greek, Turkish and even Persian cuisine. The most common ingredients are; garlic, olive oil, chickpeas, yoghurt, lemon, mint, fish and lam. As a country, Lebanon has always had a strong food culture and shares certain characteristics with other Middle Eastern countries. From floral orange blossom and the fresh bitterness from the sumac to the anise-flavoured arak and creamy labneh (a type of creamy curd), there are plenty of inspiring flavours and dishes. A lot of vegetarians are familiar with Lebanese cuisine thanks to its vegetarian and healthy dishes. The most famous vegetarian example is hummus made with chickpeas, a real superfood.
Those who like to stay closer to home will be happy to hear that we haven’t forgotten about our part of the world. While Belgian dishes are heartier and more rustic, French cuisine has a large influence on the finer art of cooking. On our menu, you’ll find true classics such as grey shrimp stuffed tomatoes, Bouillabaisse, sole rolls and vol-au-vent but you’ll also find a homemade crab cocktail, Southern French blinis and a delicious cheesecake with caramelised pears. Who said our cuisine isn’t exotic?
A culinary kick-off to a festive day. For our brunch, we also like to do something different which is why we looked for original dishes. This brunch has already been a real success story on Sundays in restaurant Hola, especially on Mother’s Day when we organised a brunch for 70 people in the Kasteelhoeve in Hoeilaart. I’m very happy to bring this formula to you now as well so that you can enjoy our 5-course brunch with friends and family. Expect fresh orange juice, coffee and some bubbles to top it off.
